The rustic crunch of cocoa nibs and the smooth sophistication of bittersweet chocolate are brightened with fleur de sel sea salt. To make the salty cocoa nib brittle, roasted cocoa nibs and fleur de sel are mixed into deeply caramelized sugar and poured onto marble to cool. The salty-sweet brittle is hand chopped and folded into bittersweet chocolate.
